EZ Cheeseeee Dip

So today I was craving cheese dip and my sister Vinella use to melt American cheese in a cup and add a little milk to it stir and eat with chips. Today I tweaked her recipe and made my own. First I took shredded Fiesta Blend cheese and put it in a microwavable bowl, I put like a cup of shredded cheese in. Then added evaporated milk in the bowl (enough to fill half way or the cheese) then I put some American cheese slices on top (about 3-4 slices). I put the bowl in the microwave for about 40 seconds and stirred and put in again, and kept doing it until cheese was completely melted. Then I put in like a tsp. of all purpose seasoning. ...and enjoy

No Hassle Fluffy Omelette...

OK, breakfast is my favorite meal. ...I can't live with out breakfast. Omelets are soooo good and they give you energy and fill you up good. A fluffy omelet is just tasty. OK, so I usually use 4 or 5 eggs depending on how many are eating 4-5 will give ya about 2 and a half servings. Take out all your ingredients I usually use eggs, a pinch of salt, ham, bacon, cheese (American) and parsley. Chop the ham and bacon, it doesn't have to be to much. Put it all (except the cheese) in a blender or food processor or "magic bullet" (which is the one I use) blend for a few seconds and you'll notice that the eggs will be all "aired up" (fluffy). Heat a skillet toss in some butter or cooking spray. Cook mixture in skillet until golden brown and put cheese on top. mmm so yummy. enjoy!

Spagetti Sunday

I love spagetti! It's my favorite food... I cook ground beef with sofrito, adobo (spanish seasoning) and sazon. I boil water and add beef flavor bouillon ("un cubito"). Also you can use 1/2 beef stock and 1/2 water. Once they are boiling trow in spagetti and cook for about 12-14 minutes depending on how much it is and how firm you like your pasta. Drain all the liquid from the pasta and mix with meat and tomato sauce. Some good motzarela makes all the diference. And enjoy!!! :) I love spagetti...

Sofrito!!

Sofrito is the base for almost all pertorrican dishes and it's alot better to make it your self than to buy a jar. The recipe is:

Ingredients
2 green bell peppers, seeded and chopped
1 red bell peppers, seeded and chopped
10 ajies dulces peppers, tops removed
3 medium tomatoes, chopped
4 onions, cut into large chunks
3 medium heads garlic, peeled
25 cilantro leaves with stems
25 leaves recao, or culantro
1 tablespoon salt
1 tablespoon black pepper


Directions
In a food processor, combine green peppers, red peppers ajies dulces, tomatoes, onions, and garlic. Add cilantro, recao, salt, and pepper. Process to the consistency of semi-chunky salsa (not watery). Place in a ziplock freezer bag, and use as needed, or freeze in portions.

Footnotes
Recao is a popular Caribbean herb with many aliases. Among them, Culantro, long coriander, ngo-gai, and Mexican coriander. It may possibly be found in Latin grocery stores, or substitute with cilantro.

Aji Dulce is a common ingredient in Puerto Rican recipes. It is a small, sweet red pepper. If you can't find it, use red bell pepper.
Also many people make this in bulk and freezes in ice cubes.

WELCOME!

Welcome to my blog!!!!!

On my lunch menu today I made: BBQ Chicken and bacon fajitas.

I just took 3 chicken breasts and cut them into cubes, cooked them on a skillet with a little olive oil and then tossed in some bacon cut in little pieces. When both chicken and bacon were fully cooked I drizzled some BBQ sauce on top and put the mix in a tortilla with some fresh spinach and lots of cheese.
